Globally, food consumption is very uneven. In high-income countries, or HICs, the average person consumes over 3,000 calories a day. In many low-income countries, or LICs, this figure can be below 2,000. This isn't just about quantity; it's also about quality. As countries develop, they often experience a 'global nutrition transition', where diets shift from grains and vegetables to include more meat, fat, and sugar.

The concept of food security is central to this topic. It is defined as when all people, at all times, have physical and economic access to sufficient, safe, and nutritious food to meet their dietary needs and food preferences for an active and healthy life. The opposite of this is food insecurity.
